This Freedom month, executive Chef Amit Kocherakar, The Resort Mumbai, shares three healthy recipes that are free from frying and unhealthy elements.

Fish  & Chips
Ingredients:
3 Fillet of pomfret fish
 ½ tsp salt 
½ tsp pepper
½ cup all-purpose flour
1 egg
2 cup panko (Bread crumb)
¼ mustard paste
½ tsp lemon juice 

Method:
Clean the fish fillet under running water.
Make a marination with egg, salt, pepper, lemon juice, all-purpose flour.
Squeeze all the water from fish fillet, apply the marination on the fillet.
Rest it for at list 1 hours, take panko crumb in one plate crumb the fillet both the side properly ,
Take non slick tray place the crumbed fish on it bake in the oven at 180 for 10-12 minutes.
Or air fry it till golden brown colour in air fryer
Serve with baked potato chips & tartar sauce.

Samosa
Ingredients:
¼ cup green peas 
2 no green chilly
1 cup refined flour
¼ cup ghee 
3 no potato
¼ cup broken cashew nuts  
½ tsp Coriander powder
½ tsp Cumin powder
1 tspGaram masala
2 tbsp. chopped Coriander
½ tsp Salt
½ cup oil
½ cup water

Method
Peal & boil potato , make a paste of ginger & green chilly
Heat oil in pan put ginger chili paste and all the ingredients and cook till it get properly mix ,
Remove mixture in one tray and cool it down ,
Make a dough by adding refined flour, ghee salt & water, make even portion from dough ad roll by rolling pin stuffed the mixture and make the samosa out of it 
Bake in oven at 180 for 10-12 minutes or air fry it till golden brown colour in air fryer.
Serve with green chutney.

Hara Bhara Kabab
Ingredients:
 1 cup green peas
1/2 cup clean spinach
2 no green chilly
1/2 inch ginger
¼ cup cottage cheese
2 no potato
1tsp chat masala
½ tsp Coriander powder
½ tsp Cumin powder
1 tsp Garam masala
2 tbsp. chopped Coriander
 ½ cup Bread crumb
½ tsp Salt

Method:
Take clean and boil spinach also clean and boil green peas.
Take a mixture bowl,  add spinach & green peas in to it & coarsely grind it.
Then chop ginger & green chilli & coriander leaves.
Peal & boil the potato & grate it.
Grate the cottage cheese in one bowl.
In the same bowl add grated  potato , chop chillies , ginger ,cottage cheese, chat masala, coriander powder , Cumin powder , Garam masala , chop coriander, bread crumbs & salt  .
Make dough out of it, make 10 equal portion out of it, make a tikki shape & place on baking tray.
Bake in oven at 180 for 10-12 minutes or air fry it till golden brown colour in air fryer.
Serve with green chutney.
